In the meantime…
I seem to now be able to upload some of my pictures, woo! So, thus far, one of the few things I really enjoy about this region of Italy is the abundance of the fresh mozzarella di bufala.
Imagine balls of cheese like that floating in a HUUUUUUGE bathtub full of the milky liquid. That’s how the stuff is sold here. You go to your favorite local cheese shop (I like mine because he’s always throwing free ricotta at me as a thank you. Makes kick ass lasagna, in case you were curious.) and tell them how many kilos you want. Or in my case, I point and tell them I want 3 balls of deliciousness because I don’t really know how much 3 balls weighs. They scoop it out using something almost akin to a fish net and dump them into a plastic bag, scoop some liquid in after it, tie it up, and send you on your merry way, 3-5€ lighter.

And finally, the finished product – Insalata Caprese. Fresh mozzarella, fresh tomatoes, a drizzle of some good olive oil, a sprinkle of some basil flakes (because I didn’t have fresh basil around), and it’s ready to be eaten. Sometimes I like to drizzle some good balsamic vinegar and a sprinkle of sea salt to change things up.
This I will DEFINITELY miss.
